Low Carb Cabbashbrowns (Hashbrowns)

Great for brunch or breakfast sides. Makes 4-6 servings, depending upon size.

Ingredients:
  • 2 TBSP Avocado, coconut, or olive oil*
  • 1 Small cabbage, shredded, about 6-8 ounces
  • 2 Whole, large eggs, scrambled
  • Season salt, pepper to taste.
Directions:

Shred cabbage with food process or fine chop.

Add whole scrambled eggs and seasons and mix well with a fork.

Add cabbage to egg mixture and combine until incorporated.

Heat oil over medium heat in non-stick skillet or frying pan. Once oil is HOT, divide the cabbage mixture into 4-6 servings and flatten onto wax paper or plate.

Sautee each serving 2-3 minutes on each side until golden brown with a little crunch. Serve quickly and enjoy them hot!
