Mashed Faux-Tatoes (Cauliflower)

Fantastic substitute for starchy potatoes that won’t make your belly bloat.

Ingredients:

1 Large cauliflower, trimmed, cored, and cut into flowers
1 cup Water or chicken broth (if steaming in Instapot)
To taste Salt, pepper, Italian seasoning
4 TBSP Butter
½ cup Shredded Mexican cheese
1-2 Oz Sour Cream
½ cup Bacon crumbles
¼ tsp Garlic powder or additional seasoning to taste
Chopped chives to taste

Directions:

Cook cauliflower in IP for 8 minutes on high pressure, steam. Release pressure and drain water from pot. Blend drained cauliflower with immersion blender, adding butter, cheese, sour cream, (additional HWC or almond milk if necessary to thicken or thin). Continue blending until smooth and creamy. Add additional bacon, chives, and seasoning to desired taste.
