Need more fiber in your diet? This 1.5 minute breakfast option is filling and delicious!
Ingredients:
1 TBSP Coconut or avocado oil
¼ CUP Flax meal, ground
1 Egg
1 TSP Baking Powder (for fluff)
¼ TSP Pink Himalayan salt
½ TSP Monkfruit or Stevia
1 TSP Vanilla extract
Directions:
Melt coconut oil in mixing cup; add all ingredients and mix well to incorporate. Microwave for 1 minute 40 seconds (depending upon individual microwave cook time). Let sit for 1 minute to set before plating.
Suggested Sides or Combos:
Berries as desired; add butter or SF maple syrup and eat like a pancacke.
