RoeJoe Chicken

Here’s an easy 30 minute healthy, yet filling, meal when you can’t think what to make for dinner!.

Ingredients:

2 skinless chicken breast cut in half (butterflied)
To taste Salt, pepper, Italian seasoning
2 TBSP Coconut oil, avocado oil, OR extra virgin olive oil
1 Tomato, diced (or 1 can diced tomatoes)
6 oz White dry wine
2 TBSP Heavy Whipping Cream
2 TBSP Butter

Directions:

Cook chicken until browned on both sides and no longer pink. Remove chicken from pan. Add a tomato diced and let cook down. Add some white wine (can omit if you want) and simmer until the wine cooks down. Add some heavy cream and about 2 tbsp. of butter until you see it thicken. Add chicken back in pan, coat with sauce and let cook enough to heat chicken through again. Simple. Delicious.
