Take the time to really chop all salad ingredients to ensure deliciousness in each bite, and it will require less dressing.
Ingredients:
- 4 oz Roasted red peppers
- 4 cups Romain or power greens
- 2 Small cucumbers
- 1 cup (150 g) grape tomatoes, halved or quartered
- 2 tbsp Pitted kalamata olives
- 1 can 15 oz, salt free, cannellini beans, drained (optional)
- ¼ cup Feta or goat cheese, crumbled
- 8 oz Protein of choice, if desired (grilled chicken, cooked shrimp, gyro meat, or quinoa)
Dressing:
- 3 tbsp Olive or avocado oil
- 1 tbsp Apple cider vinegar
- 1 tbsp Lemon juice
- 2 tsp Dijon mustard
- 1 tsp Chopped fresh oregano
- ¼ tsp Pink salt or sea salt
- ¼ tsp Fresh black pepper
Directions:
In large bowl, combine all dressing ingredients and whisk well. Next, add all chopped salad ingredients, EXCEPT feta cheese. Stir to incorporate the dressing. Add feta just before serving.
