Red Pepper Relish

Delicious compliment to salads, scrambled eggs, tacos, fish, roasted veggies, etc.

Ingredients:

  • 3 TBSP Avocado or olive oil
  • 4-7 oz Jar roasted sweet red peppers, rinsed, drained, dried and
  • hopped
  • ½ cup Chopped onion
  • 2 bulbs Finely chopped garlic (about 2 teaspoons worth)
  • 4.5 TBSP Apple cider vinegar
  • 3 TBSP Monkfruit or stevia
  • ¼ TSP Dry mustard
  • ¼ TSP Cayenne pepper (optional or to taste)

Directions:

Heat oil in large skillet over medium high heat. Add chopped red peppers and sauté until soft. Add onions and garlic and cook until tender, no more than 5 minutes.

Mix sugar and vinegar together in small bowl until sugar is well dissolved and incorporated. Stir mixture into red peppers and continue to cook down to reduce. Mix in mustard (and cayenne pepper if desired). Salt to taste. Once liquid has evaporated (5-6 minutes), remove from heat and cool to room temperature. Cover and refrigerate. Can rewarm if desired.
