Eggroll in a Bowl

Craving a healthy bit of Asian cuisine? Try this for a hearty, filling meal that works great for meal prep or a potluck.

Ingredients:
  • 1 LB Ground turkey, chicken, or beef
  • 4 CUPS Favorite slaw mix (or 2 cups cabbage + 2 cups carrots finely shredded)
  • 1 Onion, chopped
  • 2-3 Cloves garlic, minced (to taste)
  • 2 OZ Cream cheese
  • 3 TBSP Liquid Aminos or soy sauce
  • 2 TSP Rice vinegar
  • Optional ingredients: slivered almonds, fresh peas, edamame,
  • Preferred seasoning to taste (salt, pepper)
Directions:

Cook preferred meat protein until browned and crumbly. Remove from pan but reserve fat renderings and cook onions and garlic until nearly translucent. Add in the cream cheese.

Add cabbage and carrots and continue cooking until soft (no more than 2 minutes).

Add aminos and rice vinegar, salt, pepper, other seasonings to taste. Cook on low and allow to simmer for 5 minutes.
