Berry Jam in a Jar

Jam is my jam. I LOVE it, but it’sso  hard to find tasty thick jam without tons of sugar. Here’s a little goodness in a jar that fits the bill.

Ingredients:
  • ½ LB Favorite seasonal berry, cleaned and stemmed
  • 3 TBSP Agave or All-Natural Maple Syrup (or monkfruit)
  • 3 TBSP Chia seeds
  • 2 TBSP Lemon Juice
  • 1 TSP Vanilla extract or sugar free vanilla flavor shot (2 pumps)
  • Pinch of pink salt
Directions:

Clean berries and pat dry. Slice into several pieces per berry. Add berries to a small saucepan with agave (or maple syrup or monkfruit) and bring to a slow simmer to soften berries. After a few minutes, mash berries.  Stir in chia seeds and cook for 2-3 more minutes, stirring constantly. Whisk thru for texture consistency. Remove from heat and add lemon juice, vanilla, and salt.

Allow to continue thickening for a few minutes. Ladle into small jam jars or air tight containers. This should only be prepared in small batches as there is no preservative to maintain freshness for a long periods of time.

Spread on toast with a thin layer of soften goat cheese, top with fresh jam, and enjoy the flavor combination.
