Better than CFA Coleslaw

There’s something about a good coleslaw recipe that makes me happy. This takes me back to my Auntie Beth’s solid Sunday BBQ fave.

Ingredients:
  • 20 oz Finely shredded cabbage (or 2 10 oz bags any kind of slaw mix)
  • ¼ CUP Finely chopped carrots
  • 4 TSP vinegar
  • ¼ CUP Monkfruit (granulated)
  • 1 CUP Mayonnaise
  • ¼ TSP Pink salt
  • 1 TSP Black pepper (or to taste)
  • ¼ TSP Dry mustard
Directions:

Whisk together sugar, mustard, salt, and vinegar until monkfruit is dissolved. Add mayo and whisk to blend until creamy. Add cabbage, carrots (or bagged slaw mix). Combine well and refrigerate for a minimum of 2 hours before serving.
