Peach & Walnut Salad

Great option for a healthy side or appetizer for a potluck or family BBQ.

Ingredients:

1 10 oz package of organic baby spinach, roughly chopped
1 Head of green leaf lettuce
1 Large cucumber, peeled and sliced
1/3 CUP Walnut or pecan pieces

Dressing:
¼ CUP Extra virgin olive oil or avocado oil
3 TBSP Apple cider vinegar
3 TBSP Pure Maple syrup or SF flavoring
1 TSP Dijon mustard
1 TSP Poppy seeds
Pink of pink salt
Optional: feta, quinoa, or orzo

Directions:

Directions: Make your dressing by adding everything to a blender and blend until smooth. Then add all the ingredients to a very large bowl. Add dressing right before serving and enjoy!
