Summer Ceviche

Light, refreshing summer seafood combo which can be a delicious meal on its own, or added as a side salad to chicken or fish.

Ingredients:

1 EACH large cucumber, medium sweet or red onion
1 LB EACH Cooked crab, cooked steamed shrimp (peeled, deveined, chopped)
¼ CUP Red onion, finely diced (optional)
4-6 Large limes (juiced)
1 EACH Roma tomato, large avocado (chopped)
1 EACH Jalepeno & Serrano pepper (deseeded and chopped)
1 TBSP Fresh squeezed orange juice
1 TSP Avocado oil
1 Juice from 1 large lime
1 bunch Chopped cilantro

Directions:

Combine all ingredients and gently toss, marinating flavors. Add salt and pepper to taste. Allow to refrigerate for several hours prior to serving with slotted spoon so you don’t get too much liquid.
