Chia Breakfast Pudding

This easy make-ahead, healthy breakfast is a great swap for oatmeal and a great grain-free option.

Ingredients:

  • ½ CUP unsweetened almond milk
  • 2 TBSP Chia seeds
  • 2 TBSP Pure maple syrup or sugar free vanilla syrup
  • 1/8 tsp Almond extract
  • ½ CUP Blueberries
  • Optional: slivered almonds, unsweetened coconut

Directions:

Combine all ingredients except for blueberries; Cover and refrigerate overnight. When ready to serve, stir and add more milk if necessary to desired consistency. Top with blueberries, almonds and/or coconut.  Layer if preferred in a clear mason jar for a beautiful presentation.
