Carrot Cake Energy Balls

Great high-protein option for a breakie on the go, pre-workout snack, or freezable sweet treat. Packed with deliciousness and nutrition with zero cooking or baking. (Makes about 18 balls)

Ingredients:

1 CUP Chopped, pitted dates
½ CUP Rolled oats (not instant)
¼ CUP Walnuts, pecans, or nuts of choice
¼ CUP Either flax or chia seeds (grind flax)
2 Medium carrots, finely chopped
1 TSP Vanilla extract (or SF vanilla flavor shot)
1 TBSP Pumpkin pie spice
¼ TSP Pink Himalayan salt
Pinch of ground black pepper
1-2 Scoops vanilla protein powder (OPTIONAL)

Directions:

Place dates, oats, nuts, and flax/chia seeds in food processor. Pulse until combined. Add remaining ingredients and process until everything is chopped and texture is almost smooth.

(NOTE: If you’re using the protein powder, you might need to add a few drops of water to get the proper consistency. Add a drop or 2 at a time.)

Create the balls by scooping out 1 tablespoon at a time, rolling into a ball is formed.
