Pumpkin Pie Pudding

When fall is in the air, it’s all about the pumpkin pie. This healthy pudding will NOT undo all your effort and still give your taste buds and your goals a delicious harmonious combo.

Ingredients:

6 OZ Plain Greek yogurt
1/3 CUP 100% pumpkin puree
Dash Cinnamon
Dash Vanilla (bean or extract)
1 TSP Honey or SF maple syrup
1 TBSP Toasted pecans or walnuts (optional preference)
Dash Pink Himalayan salt
Optional: ¼ CUP oats or chia seeds (for breakfast)

Directions:

Combine all ingredients (except nuts) in a small bowl until combined. Taste and adjust sweetness with honey, maple syrup, or even monkfruit. Refrigerate until serving, top with nuts (if preferred). Can keep in fridge for several days for easy grab & go meals or snacks.
