Roasted Brussel Sprouts with Garlic & Parm Bites

Great option for a healthy side or appetizer for a potluck or family BBQ. Also a great breakfast or brunch side veggie or in a frittata.

Ingredients:

1 LB Brussel sprouts, halved and trimmed
2 TBSP Parmesan cheese (fresh grated)
4 TBSP Avocado or olive oil
½ TSP Salt, pepper, garlic powder (each)
¼ CUP bread crumbs (optional)

Directions:

Directions: Trim stem from sprouts and cut in half. Place trimmed sprouts in large bowl big enough to toss. Add all other ingredients and toss to evenly cover with oil and seasonings.

On foil lined or prepared baking sheet, spread sprouts out evenly. Bake at 400 degrees preheated oven for 20 minutes. FLIP and bake for 15-20 additional minutes or until fork-tender.
