This easy make-ahead, healthy breakfast is a great swap for oatmeal and a great grain-free option.
Ingredients:
- ½ CUP unsweetened almond milk
- 2 TBSP Chia seeds
- 2 TBSP Pure maple syrup or sugar free vanilla syrup
- 1/8 tsp Almond extract
- ½ CUP Blueberries
- Optional: slivered almonds, unsweetened coconut
Directions:
Combine all ingredients except for blueberries; Cover and refrigerate overnight. When ready to serve, stir and add more milk if necessary to desired consistency. Top with blueberries, almonds and/or coconut. Layer if preferred in a clear mason jar for a beautiful presentation.
